Gamebird plucking & preparation. Chef Harrie Geraerts has 2 years game butchery training. Learn how to quickly & expertly pluck and prepareyour gamebirds. Class 2-3 hours, $25, bring your own birds. Call 07 549 1581 ext 209 to book a place.

Dining at Fantail lodge over the past 20 years has earned a reputation of consistent and dedicated hospitality. Our team is passionate to the extent of having their own vegetable garden to ensure absolute freshness, something we have adopted from our time with Guide Michelin restaurants in Europe. As a matter of curiosity all game birds on our estate are for visual enjoyment only!

Our multiple awards winning team has proven to be innovative and driven, resulting in coordinating the 100% Pure New Zealand promotion for Tourism New Zealand abroad several times. Our style of cuisine is best described as classic French with flares of innovation, certainly challenging the imagination.

We are conscious of our carbon footprints and recommend our local wines of Mills Reef, Morton Estate, Steve Bird Wines and Emery Road.

Bird preparation guidelines
Game to be delivered properly cleaned, ideally four to five days prior for controlled aging. We can teach you how to pluck & expertly prepare your gamebirds, please phone to enquire about our classes.
