    Delicious Recipes

    From the wonderful NZ series, Hunger for the Wild, check these recipes out ... Pan Seared Pheasant Breast w/ Confit Leg, Jerusalem Artichoke Puree and Truffle Oil. Another stunning recipe is Wild Duck and Port Ragout with Penne Pasta and finally Ma Duley's Duck Recipe. You can also see more about the Pheasant in Rotorua epsiode here.

    And for some 'celeb' chef recipes, see Jamie's Oliver's recipe for Italian style roast of incredible game birds with polenta and this Multibird Roast recipe from Hugh Fearnley-Whittingstall.

    Gamebird Recipe Websites

    Although it is a bit hard to find your way around, the aptly named Recipes for Wild Game website has a number of recipes of interest.

    Another very comprehensive site from the USA is here. You might want to avoid the rattlesnake recipes though!

    The BBC Food website is chock full of good ideas from well known chefs.

    For for an Italian take on gamebirds, see this website.

    The Channel 4 Food website also has some great traditional British recipes such as Diced Game Birds Pie with Whisky.

    Pukeko & Swan

    I'm sure you know the old tale about boiling a pukeko with a stone and veges for 2 days then throwing out the pukeko and eating the stone? Don't you believe it! Gamebird recipes have moved on from duck, duck and the occassional pheasant.

    A classic NZ recipe (in both ingredients and linguistic style) is Pukeko and Paua Soup recipe from Keith Stewart’s blog. It’s worth a read for the style of the writing alone!
